And if bread was once baked in a Russian oven, today you can use convenient household appliances, for example, a multicooker, which will be an excellent choice. In a slow cooker you can easily prepare any dish, and baking in this case is no exception. And, considering that you can adapt absolutely any cooking recipe to a multicooker, baking bread won’t be difficult either.

Bread in a slow cooker: cooking features.

To ensure the dough rises well, you can also use a slow cooker. In the “Heating” mode, the dough rises quite well and quickly. But there are some nuances here. When enabling this mode, it is worth considering the power of your equipment model. The more powerful the model, the less time the heating mode should be turned on. Otherwise, the dough will not rise and will begin to bake.

The Bake mode is perfect for baking bread. 60 minutes of cooking will be enough for the bread to be completely ready for use. Again, it’s worth making a reservation: in a slow cooker, the top crust of the bread is not baked, that is, it does not turn brown. That is why many cooks recommend that before finally removing the bread from the multicooker, turn the finished loaf over with the bottom crust facing up so that the top crust is toasted and not pale. To do this, it will be enough to extend the “Baking” mode for 15-20 minutes.

Bread in a slow cooker: types of baking.

Using a multicooker, you can prepare any type of bread using different ingredients - rye, wheat, bran, sesame or sunflower seeds. Whatever bread recipe you choose, you can always change it for cooking in a universal kitchen appliance - a multicooker. And again I bake bran bread using whey, I really like it in the dough. Whether the dough or the bread turns out super fluffy, I can always rest assured about the results of baking.

But the dough contains little bran, and here I decided to add more bran and use only wheat flour. And since I bought compressed yeast for the occasion, I used it instead of dry.

If you do not have pressed yeast, then focus on the following proportions:

For every 100 grams of flour, take 5 g of compressed yeast or 0.5 teaspoon. spoons of dry yeast.

Therefore, this recipe uses 500 g of flour, so you need 25 g of compressed yeast or 2.5 teaspoons of dry yeast.

Since I used to make the dough by hand, with the advent of an amazing bread machine assistant in my house, I stopped getting my hands dirty with flour altogether. And therefore, even if I bake bread in a slow cooker, I use a bread machine to knead the dough; in 18 minutes it turns the dough into an excellent quality bun.

Then I throw this bun into the slow cooker to heat for a few minutes. And as soon as the dough increases in volume, I immediately bake the bread. In total, I spend 5+18+ 25+ 60 = 108 minutes. If converted to hours and minutes, then 1 hour and 48 minutes. For comparison, exactly the same bread takes 3 hours and 45 minutes to bake in a bread machine. This is how you save time when baking bread in a multicooker instead of a bread machine.

What you need for bran bread:

80 g bran powder, I used wheat bran

360 ml whey (you can also use plain water)

2 table/spoons grows. oils

500 g wheat flour.

How to knead dough with compressed yeast

The whey or water needs to be heated, so the yeast will disperse faster and the dough will generally rise more happily. The temperature of the heated whey is about 40 degrees, that is, slightly higher than human body temperature.

Pour the whey into the bucket of the bread machine, then pour in the butter, then salt, sugar, and bran.

Crumble the pressed yeast directly into the whey. Now mix all the ingredients with a spoon.

And immediately add flour, sifted flour, but how could it be otherwise?

Insert the bucket into the bread maker and turn on the fast mode; in my Philips 9046 bread maker it is called “Unleavened dough” and lasts 18 minutes.

How to bake bran bread in a bread machine

How to make yeast-free bread with whey:

Let's start cooking. Sift two types of flour through a sieve into a large cup, mix and add bran. Here you can experiment by changing the proportions of flour, or adding other types of flour (corn, rice, buckwheat). Add salt and baking soda here. Mix our dry mixture thoroughly. You can add any filling you like: cumin, coriander, flax seeds, peeled sunflower seeds, dried dill.

Heat the whey slightly in the microwave, 30 seconds will be enough. Then, with constant stirring, gradually pour it into our dry mixture.

Sprinkle the table with flour and spread the resulting mass. To prevent the dough from sticking to your fingers, sprinkle the top of the dough with flour. Now we calmly form a ball out of it.

Grease the multicooker bowl with a small piece of butter and sprinkle with breadcrumbs or semolina. Place the ball of dough in the center of the multicooker bowl; no need to press it down. You can sprinkle seeds or other filling on top.

On the multicooker panel, set the “baking” program and set the cooking time to 30 minutes. At the end of the time, you will see that the bread has increased in volume several times. All that remains is to turn it over onto the other side using a plastic steaming bowl. We set the “baking” program again for 30 minutes. I use a slow cooker to bake bread. Redmond RMC-M12, 500 W.

Just don’t rush to take out the bread immediately after the multicooker signal about cooking; let the bread simmer for another 15 minutes.

To make bread with whey without yeast you will need the following set of ingredients:

  • Whey – 400 ml,
  • Wheat flour - 3 cups,
  • Rye flour - 0.5 cups,
  • Bran - ¼ cup,
  • Sour cream – 1 teaspoon,
  • Salt and sugar 1 teaspoon each.

How to make whey bread without yeast

First you need to prepare the bread starter. To do this, pour the whey into a saucepan and leave it in a warm place for a day. Then add sour cream to the whey, mix and leave for another 12 hours.

After this, you need to knead the dough from the resulting starter. To do this, the flour should be sifted and mixed with bran, then added to the whey, having previously dissolved salt and granulated sugar in it. The dough should be kneaded in the evening to allow it to proof properly.

Then we form a bun from the resulting dough, which we transfer to a container that needs to be dusted with flour. Then cover the container with the dough with cling film and leave it overnight.

In the morning you should add a little flour to the dough, as it may become liquid. Then we form a bun from the dough, which we transfer to a baking dish or any other form, which should first be sprinkled with flour or simply greased with butter or vegetable oil. The top of the dough should be lightly sprinkled with flour.

Then place the form with the dough in an oven preheated to 180° degrees, bake the bread for 45 - 60 minutes, depending on the size of your form.

Then the finished rye wheat bread should be wrapped in a towel and placed on a wire rack until completely cooled.

Whey bread with milk powder in a bread machine

In order to prepare aromatic bread with whey milk powder in a bread machine, you will need the following ingredients:

Ingredients:

  • Whey – 340 ml,
  • Butter or vegetable oil - 1.5 tbsp. spoons (I have fragrant mustard oil),
  • Salt – 1.5 teaspoons,
  • Powdered milk – 2.5 – 3 tbsp. spoons,
  • Granulated sugar – 1 tbsp. spoon,
  • Wheat flour or a mixture of several types of flour – 520 grams,
  • Raw yeast – 20 grams (can be replaced with 1.5 tsp of fast-acting yeast)

Cooking process:

If you are using a recipe with fresh compressed yeast, proceed as follows. The whey needs to be heated and then the raw yeast must be dissolved in it, pour the mixture into the bread machine. Then add warm melted margarine or butter, salt, granulated sugar, milk powder, which must be mixed with pre-sifted flour.

In our step-by-step photo recipe for whey bread, dry fast-acting yeast is used (Saf moment and Voronezh yeasts have proven themselves very well).

The ingredients for baking bread must be loaded in the order specified in the instructions for your equipment. In a Panasonic bread machine, yeast is poured into the bottom, then flour, and the rest of the dry ingredients. And only then the liquid.

Another feature of this recipe. You may need more serum than what is listed in the ingredients above. A lot depends on the type of flour and mixture.

Close the lid of the bread machine and prepare bread in the basic mode, bread with a medium crust and a large loaf size (weighing 900-1000 g).

  • Wheat flour – 600 g,

  • Salt – 2 tsp.

  • Whey – 280 ml,
  • Egg – 1 pc.

To make whey bread in a bread machine you will need the following ingredients:

  • Yeast (dry fast-acting) – 1 tbsp. spoon,
  • Wheat flour (premium grade) – 0.4 kg,
  • Salt – 1.5 teaspoons,
  • Granulated sugar – 1 teaspoon,
  • Whey – 260 ml,
  • Vegetable oil (unflavored) – 2 tbsp. spoons.

How to make white bread with whey in a bread machine

The recipe is adapted for the Panasonic SD-2501 bread machine, size L (weight approximately 700 g), medium crust color.

Pour dry active yeast into the bread machine. Then add the pre-sifted flour. The flour must be sifted, this way it is saturated with oxygen, and this will make the bread much fluffier.

Following the flour, add granulated sugar and salt and pour in odorless vegetable oil, although some housewives add unrefined oil, this gives the bread a slight aroma of oil.

Then we add whey, which can be bought not only on the market; now many dairy product manufacturers have included whey in their range, which housewives use to make excellent baked goods.

Then we close the bread maker and set it to “Main mode”, the time is four hours, this is exactly the time that is enough to knead the dough, stand and bake aromatic bread with whey.

To make whey bread in a slow cooker you will need the following ingredients:

  • Wheat flour - 1 cup,
  • Rye flour - 2 cups,
  • Raw yeast -25 grams,
  • Granulated sugar – 1 tbsp. spoon,
  • Salt – 1 teaspoon,
  • Whey (warm) – 1.5 cups,
  • Vegetable oil 5 tbsp. spoons,
  • Ground paprika – 1 tbsp. spoon,
  • Mustard powder – 2 tbsp. spoons.

How to prepare and bake whey bread in a slow cooker

First you need to warm the whey to room temperature, then dissolve the raw yeast in it. Next, add sugar, mustard powder, ground paprika, vegetable oil (2 tablespoons), salt. Mix everything.

Pre-sift the white flour and mix it with rye flour, which should not be sifted. Then, in small portions, we begin to add flour to the liquid part of the dough.

As a result, you should get a soft dough that should not stick to your hands.

Transfer the finished dough into a deep container, sprinkle with flour and cover with a napkin, and leave with a lid on top for one hour.

After an hour, the dough should be transferred to the table and kneaded again.

Then roll the dough into a ball.
