How to make chicken liver pancakes

  • To make liver pancakes tasty and healthy, it is best to choose fresh, light-colored liver for their preparation. Also, chicken liver should not have an unpleasant odor or gray coating. Of course, pancakes can also be made from frozen liver. But it is still more advisable to choose a fresh product that retains a full range of useful microelements.
  • Before you start cooking the liver, it is better to soak it in milk or pour boiling water over it. This will remove the bitterness inherent in chicken liver.
  • To prevent the liver pancakes from falling apart, add a chicken egg to the minced meat. Just don't overdo it. One egg will be enough to prepare 500 - 800 grams of liver.
  • Fried vegetables will help make liver pancakes more tasty, i.e. onions and carrots. You can also add various grains to the minced meat, for example, semolina, buckwheat or rice.
  • Garlic and herbs will help make chicken liver pancakes more aromatic and spicy. You can also add various spices for chicken and meat to the minced meat.
  • Minced chicken liver for pancakes turns out to be quite liquid. During the cooking process, it is poured into a frying pan with a tablespoon and fried in vegetable oil or fat.
  • To prepare dietary low-fat dishes, you can fry pancakes in a non-stick frying pan without oil. You can also cook them in a slow cooker with the lid open in frying mode.
  • Ready-made chicken liver pancakes can be eaten as a separate dish or with a side dish. They are an excellent alternative to minced pork and beef cutlets and go well with mashed potatoes, buckwheat, rice, and pasta.

Everyone knows how and why liver dishes are beneficial. This is a huge amount of valuable vitamins and minerals. Of the many that exist from this ingredient, one of the common ones is liver pancakes. Even those who do not like this offal adore them. There are many options for preparing this dish; many housewives change the recipe by adding minced meat, bread crumbs soaked in milk, flour, oatmeal, boiled rice, semolina, etc. Depending on the amount of additional products added to the recipe, liver pancakes have a different structure. To get them thinner, add fewer additional components, dense ones (like cutlets), more.

The cooking process itself is not labor-intensive; it is a very quick recipe. But in order for chicken liver pancakes to actually turn out unusually juicy and tasty, you need to know some subtleties. I will share about them.

  • You can make liver pancakes from any liver: chicken, beef, pork. But they will be the most tender with chicken.
  • It is recommended to soak pork and beef liver in milk/water for half an hour before cooking. This product will relieve bitterness.
  • Any liver does not tolerate prolonged heat treatment; this will make it rubbery and dry. Therefore, you should not get carried away with long frying. The pancakes need to be brought to golden brown and removed from the stove.
  • Any recipe for liver pancakes made from chicken or other liver can be modified. For example, instead of raw onions, put sautéed onions. Either replace it or supplement it with raw carrots or potatoes, chopped on a fine grater.
  • It is advisable to soak the finished minced meat for half an hour so that flour, semolina, oatmeal, etc. become more viscous, then the pancakes will not fall apart.
  • The quality of the finished dish largely depends on the chosen main ingredient. Therefore, choose your liver responsibly, i.e. buy it fresh, not frozen. Its color should be light or not too dark, and its smell should be pleasant.
  • For dietary nutrition, cook pancakes in a double boiler, slow cooker or oven.

How to cook liver pancakes from chicken liver with carrots in a frying pan

Short grain rice, rinse and boil until done.

This recipe uses chicken liver, so be sure to cool the offal first. Remove ducts and films with a knife. Rinse the liver with running cold water, then cut into pieces.

The liver must be crushed to form a base for the dough. To do this, use a meat grinder or blender. In this case, the dough turns out liquid, and you will need to add a lot of flour.

To make the dough consistency thicker, use a potato masher to crush the liver. This is a rather unusual method, but if you want, try it. Cut off the ducts and films from the liver with a knife. The result is a fairly dense liver mass.

Place the boiled rice in a bowl with the liver mixture.

Grate the carrots on a fine grater, cut a small onion into cubes, and send to the liver.

Tip: liver pancakes with rice and carrots will turn out tastier if you first saute the vegetables until soft, and only then add them to the liver mass.

Add one spoon of wheat flour and two spoons of semolina into the dough. Now add one small egg and mix everything thoroughly.

Since the dough contains semolina, it needs to sit for 15 minutes. To give the liver pancakes a touch of piquancy, add a finely chopped clove of garlic to the dough, as well as a mixture of peppers. Finally, add a pinch of sugar.

Heat a frying pan with a thick bottom, pour in vegetable oil. Using a tablespoon, scoop out the liver dough and pour it onto the heated surface of the frying pan. The pancakes are fried quickly, about three minutes on each side (over moderate heat).

Transfer the finished pancakes to a plate and let cool slightly.

Place the pancakes beautifully on a plate, garnish the dish with tomato slices, and sprinkle with chopped dill or green onions. The sauce for such pancakes can be either creamy or tomato. Serve buckwheat or mashed potatoes as a side dish.

Some tricks for making liver pancakes:

  • To remove the bitterness of the product, before using it, you can douse it with boiled water (or simply rinse it), and then soak it in milk for a couple of hours;
  • Using onions when preparing a dish makes it juicy and gives it a delicious aroma;
  • To ensure that the pancakes keep their shape and do not fall apart throughout the pan, add flour, rice, and eggs to the minced meat;

  • After frying, the pancakes can be laid out on paper napkins so that they absorb excess fat.

By keeping these little things in mind, you can make your food healthier and tastier.

Fry the liver pancakes over high heat, literally for a couple of minutes on each side, otherwise they will become tough. If you use beef or pork liver for cooking, be sure to cut out the ducts and soak it in milk.

Option 5. Fluffy liver pancakes with pumpkin

Liver pancakes with pumpkin are even healthier and tastier. The vegetable will give the dish softness, juiciness and fluffiness. The pancakes have a slight footy flavor.

Ingredients:

  • 400 g beef liver;
  • kitchen salt;
  • one egg;
  • ground black pepper;
  • two cloves of garlic;
  • 100 g flour;
  • onion head;
  • vegetable oil;
  • a little baking soda;
  • 150 g pumpkin puree.

How to cook

We carefully prepare the liver. We remove the films and cut out the ducts. Wash the offal and dry it with a napkin. Cut into small pieces and place in a blender.

Remove the peel from the garlic and onion. Wash and cut the onion into four parts. Place the vegetables in a blender container and blend the liver with the vegetables. If you don’t have a blender, grind everything through a meat grinder.

Peel the pumpkin and remove the seeds and fibers with a spoon. Cut the vegetable pulp into small pieces. Place in a saucepan, add filtered water and cook until soft over moderate heat. Drain the water, transfer the vegetable to a plate and puree with an immersion blender.

Combine the liver mixture with pumpkin puree. Add salt, beat in the eggs and mix thoroughly. Add soda and mix again. Sift the flour and add it to the liver-pumpkin mixture and knead the dough until it has the consistency of pancakes.

Place a cast iron frying pan over high heat. Pour oil into it. Take the dough with a spoon and place it in the heated oil, forming small round pancakes. Fry for a couple of minutes on each side until golden brown.

The liver will become tender if you first soak it in milk for half an hour. To serve, you can prepare a sauce of sour cream with garlic and finely chopped dill. You can bake the pumpkin in the oven.
