A recipe for a simple, tasty and satisfying meat salad, which in addition to pork includes potatoes, pickles, onions, cheese and chicken eggs. This dish can be served either in a shared plate or in portions, making appetizing towers decorated with fresh herbs.

The dressing for the salad with pork will be mayonnaise (of course, homemade is best), which, if desired, can be replaced with natural yogurt or sour cream mixed with mustard. I use fairly lean pork (loin without fat, skin and ribs), and homemade pickles (). The cheese will be hard or semi-hard - the one you personally like. Don't skimp on the onions - they will give the finished salad juiciness and a pleasant crunch.

To prepare this tasty and satisfying meat salad, we take pork pulp, pickled (fermented) cucumbers, chicken eggs, potatoes, onions, cheese (I have Russian), mayonnaise (I prepared according to this recipe), salt, ground black pepper, and fresh herbs (optional).


By the way, if you boil potatoes, eggs and pork in advance, this meat salad can be assembled in literally 15 minutes (most of the time is spent on slicing). So, wash the potatoes, put them in a small saucepan, fill with cold water so that it covers the tubers by about a finger. Place on medium heat (you can cover with a lid) and cook after boiling at moderate simmer until the potatoes are done. For me, the Scarb variety cooks for about 25 minutes.


Chicken eggs also need to be hard-boiled - 9-10 minutes after boiling over medium heat. I use large ones (about 60 grams each), so take 5-6 small ones. To prevent chicken eggs from cracking during cooking, they should be at room temperature, just like the water. In addition, you can additionally salt the water or pour in a little vinegar - then the likelihood of damage to the shell is minimized.


We will also boil the pork. In general, there are two basic rules according to which it is customary to cook meat. If you need broth, place the meat in cold water, and when you prepare pork for salad, be sure to place it in boiling water. Then the meat will turn out juicy and very soft, since it will not have time to give all its juices to the broth. Thus, put the fillet in boiling water and cook at moderate boil for about 30-35 minutes (after the water boils for the second time, the boiling stops when you add the meat, as the water temperature drops).


While the above products are being prepared, it’s time to start preparing the rest. Peel the onion and cut into small cubes.


Transfer the chopped onion into a deep bowl and fill it with cold water - let it sit until it’s time to assemble the meat salad. Thanks to a cold bath, even the most evil and bitter onions will become more tender and pleasant to the taste. Before assembling the salad, drain the water and squeeze the onion.


Pickled cucumbers need to be chopped on a coarse grater, then remove excess liquid. Do not squeeze the grated cucumbers dry, but simply drain the resulting brine.



During this time, the chicken eggs and potatoes managed to cook. Cool them under cold running water for a few minutes and then clean them. We separate the whites from the yolks.



This way we have all the necessary ingredients ready for assembling the salad - they must cool completely. By the way, never use food that has not cooled down for salads (unless it is a warm salad or appetizer) - the dish will spoil very quickly.

Remove excess fat from a piece of pork, as it will render and then harden when frying.

Place a frying pan on the fire, pour a small amount of oil and heat it up. The heat will be high throughout the frying process.

We send the pork first for heat treatment. Stirring constantly, wait until all the liquid has evaporated. Add soy sauce and continue frying until a nice crust appears.

Throw the onions and carrots into the pan. Fry for about 5 minutes and add bell pepper. After a couple of minutes, you can balance the taste with all the seasonings and salt.

The cooking method differs in that vegetables (onions and carrots) will be fried rather than boiled.

We will prepare the following products:

  • 400 g boiled pork tenderloin;
  • 1 onion;
  • 3 carrots;
  • 2 pickled cucumbers;
  • garlic;
  • vegetable oil;
  • mayonnaise;
  • 2 packs of rye crackers.

Let's start preparing the "Obzhorka" salad. Thoroughly wash and clean the vegetables. Finely chop the onion and three carrots. Sauté everything with oil in a hot frying pan. Place in a cup, squeezing out excess fat with a spoon.

Here we add the meat, cut into strips. Squeeze the excess liquid out of the cucumbers and give them the same shape as the pork. Squeeze the garlic and stir.

You can decorate the salad in different ways. The main thing is that the crackers do not have time to become saturated with moisture.

In our case, we will lay out the contents of the cup in a slide. Sprinkle crackers on top, make a mesh of mayonnaise, salt and garnish with fresh herbs.

Salad “Merchant” with meat

There are many variations of the dish. Let's use the most popular one.

The set of products is small:

  • boiled piece of meat – 250 g;
  • canned peas – 5 tbsp. l.;
  • onion – 1 pc.;
  • carrots – 1 pc.;
  • mayonnaise;
  • spices.

For the marinade:

  • water – 50 ml;
  • vinegar 9% – 2 tsp;
  • sugar – 1 tsp.

Pour the prepared mixture over the onions, cut into half rings, and leave while we prepare the remaining ingredients for the “Merchant” salad.

Peel the carrots, chop them on a coarse grater and fry them using sunflower oil. Don't go for a golden color. It will be enough when it softens a little. Mix with diced meat.

Add the onions (drain the marinade) and peas here. Season with sauce, salt and pepper.

Caesar with pork

When preparing a salad with pork, you cannot do without a piece of chicken.

Ingredients:

  • 3 tomatoes;
  • 250 g cheese;
  • 250 g chicken breast;
  • a pack of crackers (preferably white);
  • 150 g green salad;
  • 150 g boiled pork;
  • mayonnaise.

First of all, fry the meat. Cut a piece of pork and brisket into very thin strips and quickly fry in a hot frying pan with the addition of olive oil (if you don’t have it, use sunflower oil). Pour without fat into a deep cup.

Let's prepare:

  • Korean carrots – 200 g;
  • bell pepper – 1 pc.;
  • pork without fat – 250 g;
  • greenery.

We wash the meat, remove veins and film, and cut into strips. Fry covered in a frying pan with sunflower oil until cooked. Transfer the pieces to a suitable large bowl.

Rinse the pepper, remove the seeds and also cut into thin strips. Drain all the marinade from the carrots. Mix everything with chopped herbs. The dressing in this case will be boiling sunflower oil.

General salad with beets and pork

The method of preparing the appetizer will remind you of “Herring under a fur coat.”

We will need:

  • pork – 300 g;
  • eggs – 3 pcs.;
  • carrots – 200 g;
  • beets – 200 g;
  • garlic – 2 cloves;
