Food table e. Food additives: harmless and useful. Relatively harmless additives
"Red aniline dye, cochineal carmine are added to deepen the color of meat products" - excerpt from the 1907 book "Determination of typical impurities in products" (USA). For 100 years, little has changed: cochineal (E120) is still used to give sausages and sausages a “natural” blood-red hue. And few people care that it is still made from crushed bugs and other insects.
All of these E's are nutritional supplements found in most store-bought products. Manufacturers claim that they are completely harmless, as they undergo numerous quality and safety tests. However, from time to time unpleasant facts and even scandals emerge in the media about the fact that these codes hide either toxic substances like lead, or waste that is disgusting to even think about, let alone eat.
A literate person should know what he eats, so do not ignore the composition of the purchased products. Learn to understand nutritional supplements to track their impact on your health. Such information will be especially useful for vegetarians (many E-shki are made on the basis of animal material) and for losing weight.
What it is
Food additives are synthetic substances that are added to many foods to give them certain properties. To make products appetizing and increase the shelf life, manufacturers fill them with flavors, dyes, preservatives.
Each nutritional supplement in the product is listed under a code that always starts with the letter E and includes several numbers. On the one hand, it is convenient: some of them have such long full names that the package would not be enough if you list them all. On the other hand, this is an obvious marketing ploy: not every buyer understands what is behind these E-shki and how they were produced. If they had known, they probably wouldn't have bought it.
Many believe that the hype around them, which has begun recently, is a far-fetched problem. Indeed, in a sense, sugar, salt, vinegar, pepper also belong to this category. Everything is not so simple here, therefore it is better to understand the issue in detail so that there is no doubt: is it or not, is it dangerous or not dangerous?
In 1953, the EU developed the European Food Additives Labeling System. Later it was adapted to modern production technologies and supplemented by the international Food Code Alimentarius. The letter E in the name stands for the word "Europe". The first digit is the main purpose (for example, dyes are listed under 1, antibiotics are listed under 7). Under the second and third digits are already specific substances.
E100-E199. Dyes
Purpose: to give the product a rich color.
Most modern dyes are synthetic substances created in the laboratory. It is extremely rare that their production is based on natural ingredients. First, it's too expensive. Secondly, most of them are highly allergenic.
What can be used as plant material:
- juice of fruits and plants;
- crushed flowers;
- extracts from roots, pericarp, leaves.
For example, blue natural dye is obtained from blackberries or blueberries, yellow - from marigolds or onion peels.

Harmful food additives
Recently, there has been a lot of debate in the media about how harmful food additives are to human health. Scientists still cannot give an unequivocal answer to this question.
Firstly, there are indeed dangerous E-patches that can lead to the development of various diseases, including oncology. However, here it is necessary to understand that to start such reactions, a large amount of active substance is required, and their content in products is minimal, and manufacturers adhere to the standards of regulatory indicators prescribed in the International Food Code.
Secondly, those additives that cause doubts among scientists are undergoing additional research, so the level of their harm has yet to be known.
The harm of some has already been proven, and they are prohibited for use in the food industry. Those that are still being tested are not legally required to be included in the composition of products in a number of countries. This issue is resolved regionally.
All food additives are divided into several groups according to their danger.
Table of harmful food additives
There are also unapproved additives that have not yet been tested or are under study, but there is no final result on their dangers yet. In a number of countries, for insurance, they are prohibited at the legislative level:
- dyes: E127, E154, E173, E180;
- antioxidants and stabilizers: E388, E389;
- emulsifier E424;
- against clumping and caking: E512, E537, E557;
- leavening agents: E912, E914, E916, E917, E918, E919, E92, E923, E924b, E925, E926, E929.
To minimize the harm of food additives, try to eat more fresh foods. In addition, the diet should be as varied as possible. If you eat only sausages every day, the E included in their composition will accumulate in the body and then become actually dangerous to health. If you include them in the menu every 3-4 weeks - believe me, your liver and other organs will not react in any way to such a meager dosage.
For weight loss
There are supplements that may even be helpful for weight loss:
And there are those that can add a few centimeters to your waist, so be careful with them when losing weight. For example, E-150 - caramels, contain too much sugar, or E-471 - mono- and diglycerides of fatty acids, are deposited on problem parts of the body.
If you are losing weight with the help of vegetarianism, you can find information about additives allowed and prohibited in this food system.
Nutritional supplements are the stumbling block of many scientific and philistine disputes. They constantly fall into the centers of international scandals. You can treat them in different ways: either be afraid of their harm to health and completely abandon the products that contain them; or accept it as a necessary evil (without them, most goods would spoil within a few days of production) and simply minimize possible complications.
In the modern world, there are practically no people left who would eat only completely natural food. If you do not live far from civilization, somewhere in the forest, tundra, jungle or other exotic places, then the advice is not to tune in to life without nutritional supplements (E-supplements). Every consumer should know that they can be in almost any product and take this fact into account.
This article will be your permanent guide to nutritional supplements in food (see Table below). It will help you quickly find the necessary information and determine the degree of harmfulness of the purchased product.
In order to correctly answer the question of how to treat the use of food products with nutritional supplements, it is necessary to recognize and weigh the main disadvantages and advantages of their use. Advantages - the product is better preserved, has a seductive appearance. Disadvantages - your body wears out, processing various chemicals, in simple terms - this is harmful to your health. And at certain doses of use, it becomes already dangerous.
Everyone has their own attitude to their health and their priorities in life. Many have come to terms with the daily use of products with additives, and many, on the contrary, consciously refuse almost everything in the store. But the fact that no one wants to get poisoned from an overdose of various chemicals or starve to exhaustion is for sure. Therefore, the main advice is to carefully study the composition indicated on the label of food products, and know the measure in their consumption.
It is also impossible to believe blindly that the truth was written on the label. It is not uncommon for manufacturers to add additives "by eye" which can result in a product that is dangerously over-concentrated. And it happens that the manufacturer deliberately exceeds the norm in order to hide the shortcomings of the product (staleness, poor quality of raw materials).
Unfortunately, the exact composition can only be found in specialized modern laboratories. The task of the buyer is to collect available information about the product and draw the right conclusion. The more experience and knowledge in determining the quality of a food product, the more likely it is to buy a benign product.
It should be said that not all food additives are chemicals. There are also natural ones, which, however, are much less. On the labels, you can also often find a cryptic phrase like "identical to natural". Make no mistake, these supplements are not natural and are also synthetically produced. Identical natural supplements are synthesized in the likeness of a natural substance. And artificial additives are substances that do not exist in nature, but they can imitate taste, color, smell. They must be treated with the utmost caution.
Learn to live with nutritional supplements
You don't have to fanatically avoid all foods with additives, just as you don't have to be a chip and Coke eater. To minimize the harmful effects of chemicals on your health, take the following helpful tips:
Eat vegetables and fruits every day. Dietary fiber (fiber) substance pectin (soluble fiber that gives hardness) helps the body cleanse itself of toxic substances.
Do not use chemicals when the body is weakened (illness, weak immunity).
And once again about the measure - do not eat a lot of food with food additives at once. The body can process chemicals in a certain limited amount. When the norm of the use of chemicals is exceeded, human health can be undermined and fail.
Avoid foods with unusually bright colors - a clear sign of the presence of artificial colors. Dyes can also be natural. Unusually for the season, fresh imported vegetables and fruits are also a reason to think.
Avoid subjecting food stuffed with chemicals to heat or other forms of processing, which may result in the formation of hazardous substances. If you still need to heat (frying, for example), then first study the composition of the product and the possible reaction of their ingredients. The sugar substitute aspartame (E-951), sodium nitrite (E-250) are vivid examples when, when heated, substances are formed that are much more dangerous than the additives themselves.
Information about nutritional supplements - a weapon in the hands of the buyer
Each supplement has its own acceptable daily intake (ADI), which must be taken into account when making products. But manufacturers do not indicate the mass of additives on the product packaging and do not indicate the amount of the product at which the permissible dose of the additive would not be exceeded. Therefore, the DSD figures will not bring any benefit to the average consumer.
Good to know: the list of all ingredients of the product (including food additives) indicated on the package is compiled in descending order of their number. In other words, the product contains the most ingredient listed first and the least ingredient listed last.
Below is a table of nutritional supplements that will be very useful for the consumer and will help him in the right choice of food. The table is constantly updated - new data on each food additive is added. If there is no information about the level of danger, then this does not mean that the additive is safe.
Pay special attention to the additives that are highlighted in red in the table - they are very dangerous and forbidden. If you find any in the composition of food products, immediately refuse to buy. Avoid products with hazardous additives marked in yellow. The average level of danger should alert the buyer to insecurity. Do not experiment with "suspicious" and unapproved additives. Pay special attention to additives that are highlighted in red - they very dangerous and forbidden. If you find any in the composition of food products, immediately refuse to buy. Avoid foods with hazardous additives marked in yellow. The average level of danger should alert the buyer to insecurity. "Suspicious" and unapproved supplements should also not be experimented with.
Remember that the negative impact of a substance on human health takes place if it is not used in moderation. There are no absolutely safe and dangerous food additives. For example, salt and sugar are considered safe additives, but when used in excess, they can significantly harm the human body. The same goes for harmful additives - with a small dose, your body can handle them without consequences. Do not panic when studying the composition of the product - think soberly and choose the best.
Also, keep in mind that some additives are not approved not because of their danger and harm, but only because the necessary tests have not been carried out.
Please note that nutritional supplements can be designated differently on the product label: by coding, by the full or partial name of the substance, or both. Even the code can be described in different ways - through a space, through a dash or together. Example: E-101, E101, E 101. You can find the required component in the table, if not by code, then by name.
To quickly search for a nutritional supplement in the table, use the keyboard shortcut "CTRL+F". Just dial the number or name. The table is constantly updated with new data.

We are already so accustomed to these familiar E with three digits that sometimes we do not pay attention to them at all, we consider such supplements an integral part of our nutrition. And then we wonder where our health problems come from. It seems that the products look fresh, and we always wash our hands before eating, but nevertheless, sometimes we get an upset stomach after a completely ordinary-looking meal. And we don’t associate heart rhythm disturbances, headaches, blood pressure jumps at all with food additives, although some additives are quite capable of causing all these symptoms.
Flavor and color variations
What are nutritional supplements? These are substances that are added by manufacturers to food products in order to improve certain qualities or properties of these products. For example, with the help of dyes, a pleasant color and appearance of the product is achieved, with the help of flavors - a “delicious” smell. With the participation of stabilizers, the consistency of the product is homogeneous, and preservatives can extend the shelf life of any food for a very long time.
Invention of new additives
Every year, new food additives are developed in the laboratories of technologists, currently numbering one and a half thousand items. Unfortunately, many of them are harmful E-additives, but this harm is not immediately detected, and this information is not always made public. Sometimes the facts are shamelessly misrepresented by advertisers, making the presence of various additives in the product almost their main advantage.
Conditionally harmless additives
Of course, not all additives with the E code are harmful. For example, ordinary baking soda has the E500 code, citric acid has the E330 code, pectin, a natural thickener has the E440 code. Some additives are still poorly understood, and therefore it is impossible to categorically state their harmful or beneficial effects on the body; others are extremely dangerous for human health, development and life - and this is an established fact. Moreover, some harmful additives have a bad effect on the body on their own, others are able to create new toxic compounds with certain amino acids. Some food additives turn into harmful under the influence of various factors, such as heat.
Types of additives
All food additives are divided into groups:
- Dyes - provide the color of the product (from E100 to E199);
- Preservatives - regulate the shelf life, prevent spoilage of products (from E200 to E299);
- Antioxidants - slow down the oxidation process (from E300 to E399);
- Stabilizers - give texture and shape to products (from E400 to E499);
- Emulsifiers - give uniformity to any mixtures of products (from E500 to E599);
- Flavor and aroma enhancers - everything is clear from the name here (from E600 to E699);
- Anti-flaming - prevent the formation of foam (from E900 to E999).
Starting from E1000, there are already various food additives with an enzyme base, and free indices from E700 to E899 are designed to code other technological information about products. So, let's figure out exactly how harmful additives act on our body, what consequences their regular intake with food leads to.

The most harmful products
Now that you have reviewed the table of harmful additives and the negative consequences of their use, it probably became clear to you that indigestion and allergies are not the only problems that harmful E-supplements lead to. And now consider the list of products containing the largest number of them.
- Chewing gum. It contains about 12 different harmful additives: sweeteners, dyes and emulsifiers, among which many cause indigestion and are potential allergens.
- Sweet desserts. Behind the bright packaging are products of dubious benefit, the main ingredient of which is harmful food additives in the amount of about 15 items! This applies to a greater extent to long-term storage desserts, since in addition to the “ordinary” sweeteners, dyes and emulsifiers, they also contain preservatives.
- Sweet carbonated drinks. The composition of soda, beloved by many, contains nothing but water and a whole range of harmful food additives, among which, by the way, there are also dangerous carcinogens.
- Sausages. In the production of such appetizing-looking sausages, wieners and sausages, both preservatives and dyes are used (this is where the pleasant pink color comes from), flavor enhancers, and emulsifiers. In total, there can be up to 10 such additives in sausage, the most dangerous of which is sodium nitrate: in case of an overdose, severe poisoning is possible.
- Yoghurts on the store shelves are not at all as healthy as advertised. Of course, there are also products that are close to natural, but often the density of yogurt is achieved due to modified starch, and the delicate fruity smell is just a consequence of the action of flavors.
- French fries. The taste stabilizers contained in such potatoes can be genetically modified, and sodium gluconate, which enhances the taste, is very dangerous for health. Plus, fast food potatoes are often fried, which has been used for frying many times before, and therefore has accumulated a fair amount of carcinogens.
Solution
How to protect yourself and avoid the influence of harmful food additives?
- Do not buy products with a too long shelf life, food in fast foods, products that have an unnatural bright color.
- Avoid fruits and vegetables that are unnaturally shiny and don't smell at all. Almost certainly they were stored and transported for a long time, treated with compounds containing harmful substances for better preservation. Choose seasonal vegetables and fruits, "ours", not imported ones. Let them not be so perfect in shape, but they will not reward you with another nutritional supplement in addition.
- At least occasionally look at the list of harmful food additives, remember at least the most dangerous of them, so that when you read the composition of the product on the product packaging, you can avoid these substances from entering your body.
- Prioritize food. Even ice cream and mayonnaise can be made at home instead of buying these products in the store.
By following these simple rules, you can avoid many health-threatening consequences. After all, you must admit: it is easier to prevent certain diseases than to treat them later.
Modern food products have a very appetizing look, taste and smell. Today, these qualities can be preserved in sealed packaging for up to several years, and all thanks to miracle substances - food additives E. These substances, while improving the presentation, unfortunately, do not improve the quality of the products they contain. The use of food additives E does not bring health benefits, and each of them, even in a hundredth of a percent, is harmful. They are produced for the convenience of the seller and the manufacturer - to increase sales. Each additive carries harm in different amounts based on body weight, but no matter how scanty it may be, it has been proven by medicine that they tend to accumulate in the body.
It should also be taken into account that some food additives, although they are poisonous in significant doses, are used in production in a safe amount for humans, sufficient, for example, to protect meat products from the growth of pathogenic bacteria. Each person individually reacts to each substance, therefore, the country's leading sanitary doctors do not recommend the frequent use of foods containing food additives E, especially for young children and children with allergies. It is also recommended for children to use products containing no more than 3 nutritional supplements. , here we will talk about harmful ones.
Instant vermicelli usually contains sodium benzoate, which is a strong allergen.
Below is a list of food additives that most often cause allergic reactions, even of the mildest nature.
- Benzoates (E210–219) are a group of E food additives that are used in production to extend the shelf life of a product. They can be found in the composition of marmalade, marshmallows, jelly products, confiture, jam, fruit juices, in margarine, canned fish, caviar, chewing gums. Please note that they can be in the composition of toothpaste and medicines.
- Sulfites (E220-229). They are added to products for long-term color retention. They are found in the composition of dried fruits, seasonings from dried vegetables, frozen dough, added to fruit juices, marmalade, jam, marshmallow, products with, ketchup and tomato paste.
- Nitrates and nitrites (E240-259) are found in cheeses, sausages and smoked fish, they are added as preservatives.
- Antioxidants (E300–E399) are added to vegetable oils, heavy cream desserts, fatty and fried foods, ice cream, chips, and chewing gum to prevent these foods from going rancid.
- Sorbic acid (E200) is often found in juices, sausages and fish products, in confectionery, bread, rolls. Keep in mind that packaging material is often processed with sorbic acid.
On a note! Food additives can be of natural origin, from plant and animal products. In case of allergic intolerance to the product itself and the food supplement made from it, it can cause an allergic reaction.
For example:
- Dye E160 is obtained from calendula, tropical plants and carrots;
- antioxidant E322 - from sunflower and soybean oil, peanuts, corn or chicken eggs;
- thickeners and stabilizers E410 (locust bean gum), E412-414 (guar gum, tragacanth, gum arabic) - from beans grown in tropical and subtropical latitudes;
- E1101 - from tropical trees, papaya fruits;
- E1400–E1450 is starch itself and its modified forms, which are made from, corn, rice, legumes, wheat;
- E621 - monosodium glutamate, the most common food additive found in most foods, is made from wheat.

In this section, we will consider food additives prohibited in food production.
Officially in Russia, the use of only 8 E is prohibited.:
- E121 - citrus red 2 (synthetic dye). The World Health Organization classifies the dye as a toxic substance. According to the results of test tests, it is recognized as a carcinogen, it has a negative effect on the urinary system and lungs of a person - it activates the growth of cancer cells and the formation of malignant tumors.
- - amaranth (artificial coloring). Has carcinogenic properties: increases the likelihood of malignant tumors; is the cause of fetal growth retardation, intrauterine malformations.
- E128 - red 2G (artificial dye). It has an adverse effect on the human nervous system: it causes a violation of memory, coordination, a state of general malaise. According to the results of experiments on animals, it is classified as a carcinogen.
- E216 - propylparaben (preservative). It is believed that the preservative is the strongest allergen, causes infertility in men and provokes the formation of cancerous tumors in the mammary glands of women. There is no scientific evidence.
- E217 - sodium salt of para-hydroxybenzoic acid of propyl ester (preservative). Contraindicated in people prone to allergies, asthmatics. The preservative is the cause of headaches, causes a violation of the functions of digestion, the growth of malignant neoplasms.
- - formaldehyde (preservative). It provokes the occurrence of oncological diseases, in particular - the nasopharynx. The lethal dose of oral administration is 60-90 ml.
- E924a - potassium bromate (bakery improver). It has carcinogenic properties, has a toxic effect on the urinary system.
- E924b - calcium bromate (bakery improver). It is toxic to human skin and mucous membranes, the reason for the rapid growth of malignant tumors.
Dye E128 has been banned since 2007 by G.G. Onishchenko (chief sanitary doctor of the Russian Federation). Until 2007, it was used in the production of sausages and frankfurters.
E216 and E217 were previously included in the list of permitted. It was believed that they do not have a detrimental effect on the human body. Excluded in 2005 by the decree of G.G. Onishchenko.
Setting safety standards
The official document authorizing the import and use of food additives is the Decree of the Ministry of Health of Russia dated April 18, 2003 No. 59.
The Decree put into force SanPiN 2.3.2.1293-03, in Appendix 1 of which there is a List of additives allowed for import and use in industry.
The Ministry of Health of the Russian Federation and Rospotrebnadzor periodically conduct an analysis.
When, according to the results of studies, the additive is for the human body, it is subject to exclusion from the List. In this case, a decree "On the prohibition of the use of food additives" is issued.
The List does not contain prohibited additives, as well as those that are not authorized in the Russian Federation. Unauthorized are those that pose a danger or the safety of which has not yet been proven by scientific research (they are currently being carried out or have not been carried out at all). For example, E925 - chlorine (bleach); E233 - thiabendazole (preservative).
Reasons for the ban
There are the following criteria for prohibiting the import and products containing them into the territory of the Russian Federation, as well as the prohibition of their use in the food production process:
- has carcinogenic properties: it is the cause of the formation of malignant tumors in the human body;
- adversely affects human health: disrupts the functioning of the central nervous system, the system of the digestive and urinary organs, the reproductive system, the neurovascular system;
- is the cause of allergic reactions;
- has a toxic effect on the human body.
Now that you know what impurities are prohibited on the territory of the Russian Federation, let's talk about those that are allowed in Russia.

The presence in food products is not a reason to send any goodies to the trash can. It is definitely worth avoiding 8. Remember that the list of allowed for use is quite wide.
It is compiled by public authorities interested in the health of the nation, based on research, and is systematically revised. The use of products containing approved additives does not pose a threat to health.
We hope that the list of prohibited impurities prepared by us will be useful to you, and now you know exactly which are prohibited in Russia and which are allowed.
